Texas Caviar

This versatile salad has always been a favorite of mine. Use it as an appetizer for a party or as a side dish for a casual dinner. It’s also a great snack for watching football or one of those sappy Hallmark holiday movies.

Ingredients

  • 4 cans of Beans (your choice; go for variety)
  • 1 can of Corn
  • 1 cup diced Onion            
  • 1 cup diced Pepper         
  • 1 cup diced Celery
  • Marinade:
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1 Tbsp. Water
  • 3/4 cup Apple Cider Vinegar      
  • 1/2 cup Olive Oil
  • 1 cup Sugar

Directions

Drain and rinse the beans and corn. Add the diced vegetables and mix well. To make the marinade, mix the ingredients in a pot and boil for five minutes. Cool. Pour the marinade over the bean/veggie mixture, and refrigerate for 24 hours before serving. Serve it with tortilla chips (the cup-shaped ones are perfect) or simply enjoy as a bean salad.
